Almond Poppy See Bread, courtesy of Mrs. Sue Sistrunk
3 cups flour
2 3/4 cups sugar
1 1/2 tsp. Baking Powder
1 1/2 tsp. salt
3 eggs
1 1/2 cups milk
1 1/2 cups oil
3 tsp poppy seeds
3 tsp each vanilla, almond and butter extract
I just throw everything in a mixer and blend all together and beat 2 minutes. Turn into 2 greased loaf pans or 5 mini-loaves. Bake 1 hour at 350 (I had to leave mine in the oven about 10 minutes longer). Test with toothpick, bread is ready when the toothpick comes out clean from the center of the loaf. Brush glaze while loaves are warm.

Glaze:
1/4 cup orange juice
3/4 cup sugar
1/2 tsp each vanilla, butter, and almond extract
Bring to boil, simmer a few minutes. Use a pastry brush to brush all of the glaze onto the loaves... And enjoy!

I actually like this version a little better because the bread was less dense and a little more airy... check the nutrition labels on which one is actually better for you though!
