Baking for a Snowy Day

Here's an easy recipe for your snowy day! It's been a favorite of my family's since Mrs. Sue brought it to my Grandmother in Montgomery. It was always a special treat when we went to visit and now I love it with a good cup of coffee :) It makes great gifts when you bake it in mini-loaves and is an easy recipe to double!

Almond Poppy See Bread, courtesy of Mrs. Sue Sistrunk

3 cups flour
2 3/4 cups sugar
1 1/2 tsp. Baking Powder
1 1/2 tsp. salt
3 eggs
1 1/2 cups milk
1 1/2 cups oil
3 tsp poppy seeds
3 tsp each vanilla, almond and butter extract

I just throw everything in a mixer and blend all together and beat 2 minutes. Turn into 2 greased loaf pans or 5 mini-loaves. Bake 1 hour at 350 (I had to leave mine in the oven about 10 minutes longer). Test with toothpick, bread is ready when the toothpick comes out clean from the center of the loaf. Brush glaze while loaves are warm.

All of the ingredients tossed in and ready to mix!
The final product!

Glaze:
1/4 cup orange juice
3/4 cup sugar
1/2 tsp each vanilla, butter, and almond extract

Bring to boil, simmer a few minutes. Use a pastry brush to brush all of the glaze onto the loaves... And enjoy!

The glaze as it's boiling... it will make your kitchen smell amazing!

Mom brushing on the glaze like the pro that she is!
Note: I actually made this with a little twist on the recipe... You see, one of my best friends is allergic to dairy and this recipe was so easy to make dairy free! I just changed the 1 1/2 cups of dairy milk to: bum bah dah bah!!!
I actually like this version a little better because the bread was less dense and a little more airy... check the nutrition labels on which one is actually better for you though!
